		<description> My mom makes caneloni like these, but she uses spinaches belong the chicken (or turkey) and the ricotta to keep it wet during cooking.
	
Also she doesn&#8217;t use lasagna paste for the caneloni rolls, instead she uses very thin pancakes: 
	
Mix 400gr. flour XXXX or so - 4 cups milk - 2 eggs - little salt.
	
In a Hot! frying pan almost without butter, put 1 large spoon of mix, swing it to fill the pan to make its round and turn to the other side in seconds.
	
They don&#8217;t need grease, throw the first pancake as it carries too much.
	
Fill the rolls, put in two levels inside a try.
	
Cover with white sauce: Put 1/2 spoon of flour in a 1/2 cup of hot milk at low-med heat, stir with a wooden spoon until it thickens (with no lumps). Melt Chesse as you like.
	
Bake about 40-45min, while adding tomato sauce around the borders of the try to keep it wet. These caneloni can suck all the sauce you can put!
If you don&#8217;t like onion, just use garlic to make the tomato sauce (rajú). 
	
It&#8217;s a light and tender sucessfull caneloni.
It&#8217;s very rich. </description>
